Recipe of the Week: Taco Soup

  • ½ medium onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons olive oil
  • 3 cups vegetable broth
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14½-ounce can diced tomatoes
  • 1 can (16oz) picante sauce
  • 1 cup whole wheat rotini, uncooked
  • 1 small green pepper, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin

Saute the onion and garlic in oil for about 5 minutes. Add the remaining ingredients and bring to a boil. Simmer for 10-12 minutes or until pasta reaches the desired tenderness.
