Recipe of the Week: Sweet Zucchini & Summer Squash
- 2 small zucchini, thickly sliced
- 1 small summer squash, thickly sliced
- 2 fresh tomatoes, seeded and quartered
- ¼ cup apple cider vinegar
- 2 Tablespoons canola oil
- 2 Tablespoons sugar
- 1 teaspoon oregano
- Combine all ingredients in a small crockpot. Cook on high for 3-4 hours or until you reach the desired tenderness.
