Recipe of the Week: Pumpkin Molasses Cookies

  • 1 cup molasses
  • ¾ cup shortening
  • 15 ounces canned pumpkin
  • 1 cup whole wheat flour
  • 1 cup All-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon cloves
  • ½ teaspoon nutmeg
  • ½ cup raisins
  1. Heat molasses and shortening in a medium saucepan until melted. Remove from heat and add pumpkin.
  2. Combine all dry ingredients. Add dry ingredients to pumpkin mixture. Stir in raisins.
  3. Line baking sheet with parchment paper. Using a small scoop or spoon, drop batter onto paper. Bake at 325 degrees for 12 minutes or until firm. Frost with icing if desired or serve plain.
