Mixed Berry Shortcake

Recipe of the Week: Mixed Berry Shortcake

  • 1 small package instant vanilla pudding mix
  • 2 cups skim milk
  • 2 cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • cup sugar
  • 6 Tablespoons trans fat-free margarine, cold
  • ⅔ cup skim milk
  • 8 cups mixed fresh berries
  1. Whisk together vanilla pudding mix and 2 cups of milk.  Set in refrigerator to chill.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and sugar. Cut in margarine until mixture resembles coarse crumbs. Stir in ⅔ cup milk until soft dough forms. Pat gently into a 9-inch square baking dish coated with cooking spray. Bake at 400 degrees for 15-20 minutes or until lightly browned. Cool.  
  3. Cut shortcake into ¾-inch cubes.  In parfait glasses or glass serving dish, alternate layers of shortcake, pudding, and fruit and serve.
