Recipe of the Week: Chocolate Zucchini Cake

  • 1½ cups All-purpose flour
  • ¾ cup whole wheat flour
  • ½ cup cocoa
  • 1 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1¾ cup sugar
  • ½ cup margarine
  • ½ cup applesauce
  • 2 large eggs
  • 1 teaspoon vanilla
  • ½ cup buttermilk
  • 2 cups grated zucchini
  • 6 ounces semisweet chocolate chips
  • ¾ cup walnuts, chopped
  1. Combine flours, cocoa, baking soda, and salt.
  2. Beat sugar, margarine, and applesauce until well blended. Add eggs & vanilla and beat well.
  3. Add the dry ingredients and buttermilk alternately and gradually to the creamed mixture (3 additions of each). Stir in the grated zucchini.
  4. Pour batter into greased 9x13 pan and sprinkle with chocolate chips and walnuts. Bake at 325 degrees for 50 minutes or until done. Cool in pan.
