Apple Honey Puff Pancake

Recipe of the Week: Apple Honey Puff Pancake

  • ¾ cup flour
  • 1 Tablespoon sugar
  • 3 eggs
  • ¾ cup skim milk
  • 2 Tablespoons trans fat-free margarine (divided)
  • 2 large apples
  • ¼ cup honey
  • 2 teaspoons lemon juice
  • ½ teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 2 teaspoons cold water
  1. In a mixing bowl, combine flour, sugar, eggs, and milk until smooth.
  2. Place 1 Tablespoon margarine in a round casserole dish. Heat at 400 degrees for 3-4 minutes until melted. Tilt dish to coat bottom and sides.
  3. Pour batter into hot dish. Bake for 16-20 minutes or until edges are lightly browned.
  4. Meanwhile, in a saucepan, saute apples in 1 Tablespoons margarine until lightly browned. Stir in honey, lemon juice, and cinnamon.
  5. Combine cornstarch and water until smooth. Add to apple mixture. Bring to a boil, cook, and stir for 2 minutes or until thickened. Spoon on to pancake. Serve immediately.
