Recipe of the Week: Easy, Healthy Potato Soup

  • 3 large Russet potatoes, diced
  • 2 stalks celery, chopped
  • 1 small onion, diced
  • 2 Tablespoons margarine
  • 2 Tablespoons flour
  • 2 cups skim milk
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  1. Boil diced potatoes in salted water until soft.
  2. In a large saucepan, sauté celery and onion in margarine until softened. Stir in flour and cook for 1-2 minutes. Stir in milk, salt, and white pepper. Add the cooked potatoes. Bring to a boil and simmer for 5 minutes until slightly thickened.
